Dinner time! Today I made vegan Tom Yum soup with Tofu, served with rice and green tea :)
Here's the recipe:
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp vegan Tom Yum paste
- 2 cups of cabbage, chopped
- 1 carrot, grated
- 1 head of broccoli, chopped
- 250 g medium-firm tofu, cubed
- 2 cups of crushed tomatoes
- 2 tbsp dark soy sauce
- 1/2 tsp dried basil
- 1/2 tsp red dried paprika powder
- Salt and pepper to taste
- 4 cups water
- 1 cup rice (optional)

- Total time: 45-65 minutes
- Preparation time: 15-25 minutes
- Cooking time: 30-40 minutes
# Tom Yum paste
If you don't have Tom Yum paste, you can easily make it by mixing:
- 8 g granulated white sugar
- 6 g salt
- 5 g vegetable oil
- 10 g lemon zest
- 4 g chilli powder
- 2 g citric acid
- 1.5 g ginger root
Of course you may get a different result depending on your ingredients, but this is not a bad alternative if you don't have Tom Yum paste.
# Instructions
- Heat the vegetable oil in a large pot over medium to medium high heat.
- Add the chopped onion and minced garlic, cook until they are soft and fragrant.
- Stir in the vegan Tom Yum paste and continue to cook for about a minute.
- Add the chopped cabbage, carrot, and broccoli to the pot. Combine them by stirring.
- Add the tofu cubes to the pot. Cook for a few minutes until the tofu is heated through.
- Pour in the crushed canned tomatoes, the soy sauce, and water.
- Add in the died basil and paprika.
- Season with salt and pepper.
- Bring the soup to simmer.
- Cover the pot and let simmer for about 20-30 minutes, until the veggies are soft.
- While the soup is simmering, cook your rice according to package directions.
- Taste the soup and adjust the seasoning if needed.
- Serve your soup hot with a side of rice and (optionally) green tea.
Enjoy! This makes 4-5 servings easily.
