i've realised i have never shared my pancake recipe on here and as i'm making pancakes today - "why not share it ?" i thought to myself, so here's a really basic vegan pancake recipe that's never failed me :
- 1 cup flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon sunflower oil or any other neutral oil ( + more for cooking )
- 3/4 cup water
- 1/4 cup oat milk or soy milk
now, combine your batter :
- add in all your dry ingredients ( sift in your flour, sugar, baking powder, and salt )
- add in wet ingredients ( oil, water, oat / soy milk )
- mix until no more dry ingredients are seen - the batter may have chunks, that's fine, let the batter sit while your pan heats
and then cook it
- put your pan on medium to medium high heat
- pour some oil into a pan
- wait until everything's around the same temperature
- pour in some batter for each pancake ( around 1.5 heap tablespoon for each pancake )
- let it cook until the edges are set and / or you see bubbles on the surface or the surface is pretty set up
- flip it and wait til the other side is golden
after they're done cooking place them into a plate and cover it so the moisture is reserved and they don't become dry, let them sit for around 10 minutes
enjoy, serve with fruit or berry jam
if you're watching your calories don't make this - it's a very caloric and sugary desert
suggestion : add some blueberries or other berries into the batter :)
