This is the best vegan stew I've had: a recipe

Hello, World,

Recently I was batch-cooking some food, and this time I decided on a stew because why not. It turned out fire. It doesn't look the best but it tastes bomb trust me.

As usual, my recipes are NEVER meant to be followed like gospel. Please adapt to your own wants. This is an outline, not an instructional manual. I generally cook by the principle of "does this sound good in this quantity?"

# Procedure

  1. Prepare your ingredients
    • Wash and cube your sweet potatoes into 2-4 cm or so cubes.
    • Finely chop your onion and garlic
    • Rinse red lentils, green lentils, and buckwheat separately.
    • Mix all spices from the Spice Mix in a separate container.
  2. Create flavour base
    • Place your pot over medium heat.
    • Add in 2 tbsp olive oil.
    • Add the chopped onion.
    • Fry for 7-9 minutes until soft and golden.
    • Add garlic and cook for another minute.
    • Add in the Spice Mix.
    • Stir for 30-40 seconds. DO NOT LET THE SPICES BURN!
    • Add 1 tbsp soy sauce, stir and scrape the pot.
  3. Start cooking the green lentils
    • To the pot add your 180g rinsed green lentils
    • Enough hot/warm water to generously cover it (like 1.3-1.5 litres is probably fine)
    • 0.5-0.75 mushroom stock cube
    • 0.25 vegetable stock cube
    • 1 bay leaf
    • Dried mixed vegetables
    • Stir and bring to a boil.
    • Cook for ~10 min., partially covered
  4. Add sweet potatoes and red lentils
    • Add all sweet potatoes
    • 50g red lentils
    • Might need to add more water too
    • Simmer for another 7-10 minutes
    • Note: red lentils will break down during the cooking, which is what we want. They serve a thickener purpose.
  5. Add buckwheat and textured soy protein / soy mince
    • Add in 90g rinsed buckwheat
    • 90g textured soy protein
    • More water if stew is becoming too thick (you want a slightly soupy texture)
    • Simmer for another 7-10 minutes.
  6. Add in frozen vegetables
    • Add in your 250-300g frozen veggies
    • Cook for another 5-7 minutes.
    • Add in more water if needed at any point.
  7. Finish the flavour
    • To the pot, directly add in 1.5 tbsp hot mustard
    • 1 tbsp lemon juice
    • 2 tsp white rice vinegar
    • 3-4 tbsp nutritional yeast
    • 2 tsp dried dill
    • Stir well.
  8. Rest
    • Let the stew rest for 10-20 minutes

# Serving

Just eat. This stew doesn't really need anything extra, but you could eat it with like bread if you so wish to.

Idk I ate mine with Melissa (lemon balm) tea. Love Melissa tea.

This makes enough stew for like probably 5-6 portions if not more.

'Til next time!!!
